Cheese soup

    butter
  • 3
    spring onions, finely chopped
  • 125
    ml
    plain flour
  • 1
    Litres
    vegetable or chicken stock
  • 250
    ml
    milk
  • 100
    g
    pumpkin, finely grated
  • 150
    g
    grated Cheddar cheese
 

Method

 
Melt butter and sauté spring onions over medium heat for 3 minutes, until soft. Add the flour and stir for 2 minutes, until smooth. Mix together stock and milk and add to pan gradually, stirring until smooth. Add pumpkin and bring to the boil. Reduce heat and simmer, uncovered, for 10 minutes. Add cheese and stir until melted and smooth. Ladle soup into bowls and serve with crusty rolls.
