Cheese sauce

    ml
    butter
  • 35
    ml
    cake flour
  • 250
    ml
    milk
  • 5
    ml
    French mustard
  • 125
    ml
    Cheddar cheese, grated
  • 60
    ml
    freshly grated Parmesan or mild blue cheese
  • salt and pepper to taste
 

Method

 
Heat the butter in a saucepan. Once melted, stir in the cake flour and stir over the heat for 30 seconds, then gradually whisk in the milk.
Continue to stir over a gentle heat until sauce thickens. Stir in the mustard and cheeses and add salt and pepper to taste.
Serve on fish, burgers, vegetables, chicken and on pasta.
