  • salt, cayenne and white pepper to season
 

Method

Preheat the oven to 200 ºC. Put the butter and water into a large pan. Bring to the boil slowly, by which time the butter should have melted. Tip in the flour immediately, and remove from the heat. Beat the mixture with a wooden spoon until it becomes smooth and thick, leaving the sides of the pan. Stand the pan in cold water. When cool, beat in the eggs a little at a time until the mixture is soft, shiny, smooth and of dropping consistency. Put small teaspoons of mixture on a greased baking sheet about 8 cm apart. Bake in preheated oven for 20 minutes until puffed and golden brown. Cut off the tops and allow to cool. Spoon the fulling into each base and replace the tops. FILLING: Melt the butter and stir in the flour. Add the milk, beating as you go. Bring to the boil. Add the cheese and seasoning. Set aside to cool.
