Ingredients (8)

75.00 g olives — black, pitted
75.00 g red pepper — deseeded
0.00 spinach — young leaves
250.00 g mozzarella cheese — cubed
DRESSING
0.25 cucumber — finely chopped
5.00 ml lemon — zest only
250.00 ml mayonnaise
1.00 garlic — cloves, crushed

Method:

Finely chop the olives and peppers and spoon a little on top of a spinach leaf.
Top with a cheese cube and wrap the spinach leaf around the filling.
Secure with string.
Repeat until all the filling has been used and chill until just before serving.
Mix all the ingredients for the dressing.
Braai the spinach parcels over hot coals for 1 to 2 minutes or until the cheese has melted.
Serve immediately with the dressing and pitta bread if desired.
