400.00 ml flour — self-raising
7.00 ml mustard — powder
salt — pinch
50.00 g butter — grated
50.00 g walnuts — finely chopped
45.00 ml fresh chives — finely chopped
250.00 ml cheddar cheese — grated
1.00 eggs
150.00 ml milk

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a 22 x 11 cm loaf tin with non-stick spray and line the bottom with wax paper. Sift together the self-raising flour, mustard powder and salt. Grate the butter and add to the dry ingredients. Rub in with your fingertips until the mixture resembles breadcrumbs. Add the walnuts, chives and a third of the cheese and mix.
Whisk the egg and milk together and add to the flour mixture. Mix. Turn the mixture into the prepared loaf tin, spreading it evenly. Bake for 30 minutes before sprinkling with the remaining cheese. Bake for another 10 minutes or until a testing skewer comes out clean when inserted into the centre of the loaf. Turn out onto a wire rack to cool.
