280.00 ml brown sugar — soft
4.00 eggs — extra-large
160.00 ml currants
160.00 ml sultanas
160.00 ml raisins
100.00 g glacé cherries
50.00 g mixed citrus peel
50.00 g walnuts — finely chopped
500.00 ml flour — self-raising
100.00 g gouda cheese — grated
1.00 apples — peeled, thinly sliced

Method:

Preheat the oven to 160ºC (325 ºF). Spray a 20 cm loose-bottomed cake tin with non-stick spray and line with baking paper. Whisk the butter until light and creamy. Add small quantities of sugar while beating continuously. Add the eggs one by one, beating well after each addition. Add all the fruit and nuts and fold in together with the self-raising flour. Turn half the cake batter into the prepared tin. Sprinkle with the cheese and arrange the apple slices on top. Turn the remaining batter into the cake tin, spreading evenly. Bake for 2 1/2-3 hours or until the cake is done. Leave to cool in the tin for 30 minutes. Turn out onto a wire rack to cool completely. Serve within 2-3 days.
Makes a medium-sized cake.
