    Cheddar cheese, grated

    egg yolks
  • iced water, if needed
  • TOPPINGS
  • sesame seeds
  • poppy seed
  • split almonds
 

Method

 
Preheat the oven to 150 ºC (300 ºF). Sift the dry ingredients together and rub in the butter until the mixture resembles breadcrumbs. Add the Cheddar cheese and combine well. Add 1 egg yolk and iced water to form a stiff dough. Shape into a ball and chill for about half an hour. Roll out the dough until it is 3 mm thick and cut out shapes with a biscuit cutter. Brush the biscuits with the remaining egg yolk and sprinkle with any of the toppings. Place on a baking sheet and bake for 20 to 25 minutes or until the biscuits are straw coloured.
