Cheese and wine soup

    butter
  • 1
    large onion, finely chopped
  • 60

    cake flour
  • 375
    ml
    chicken stock
  • 375
    ml
    heated milk
  • salt and pepper to taste
  • 500
    ml
    grated cheese
  • 100
    ml
    dry white wine
 

Method

 
Slowly melt the butter in a large saucepan. Add the onion and sauté until soft. Add the cake flour and stir well. Remove from the heat and stir in the stock and milk. Return to the stove and heat until the mixture comes to the boil and thickens. Stir continuously. Season with salt and pepper to taste. Add the cheese and wine and heat until warmed through. Serve with wholewheat bread or croûtons. Serves 4.
