Ingredients (8)

60.00 ml butter
1.00 onion — finely chopped
60.00 ml flour — cake
375.00 ml stock — chicken
375.00 ml milk
salt and freshly ground black pepper — to taste
500.00 ml cheese — grated
100.00 ml wine — dry white

Method:

Slowly melt the butter in a large saucepan. Add the onion and sauté until soft. Add the cake flour and stir well. Remove from the heat and stir in the stock and milk. Return to the stove and heat until the mixture comes to the boil and thickens. Stir continuously. Season with salt and pepper to taste. Add the cheese and wine and heat until warmed through. Serve with wholewheat bread or croûtons.
