Cheese and veggie parcels

    medium-sized potatoes, thinly sliced

    medium-sized onion, sliced
  • 2
    red peppers, sliced
  • 8
    courgettes, sliced thickly

    patty pans, quartered
  • 4
    medium-sized fresh black mushrooms, sliced

    olive oil
  • salt and freshly ground black pepper
  • 250
    Cheddar cheese, grated
  • fresh basil or origanum, coarsely chopped

1. Divide the potato slices into 4 equal helpings and place them on 4 double sheets of aluminium foil or greaseproof paper. Divide the rest of the vegetables and arrange on top of the potato slices. 2. Drizzle the olive oil over the vegetables and season with salt and pepper. Top with grated cheese and basil or origanum. 3. Close the parcels, place on a baking tray and bake in a preheated oven at 180 ºC for 15 to 20 minutes.
