45.00 ml fresh chillies — 573
1.00 onion — sliced
350.00 g flour — white bread
5.00 ml Bicarbonate of soda
5.00 ml Baking powder
2.00 ml salt
100.00 ml mature cheddar cheese — grated
250.00 ml Buttermilk
2.00 eggs — large

Method:

Heat oil in a frying pan and fry onion slices until lightly browned. Set aside.
Sift together the flour, bicarbonate of soda, baking powder and salt into a bowl. Mix in the cheese. Make a well in the centre and add the buttermilk, 1 egg and half the onion. Mix together lightly until just combined. Do not overmix or knead, because that will make the texture heavy.
Shape into 6-8 rounds and place on a greased, floured baking tray. Brush with beaten egg and sprinkle with remaining onion rings. Bake in a preheated oven at 220 ºC for 15 minutes, until golden and cooked through. Serve warm with butter. Makes 6-8.
