Ingredients (10)

6.00 bread — sliced wholewheat
butter — for spreading
6.00 tomatoes — thinly sliced, seasoned
TOPPING
125.00 ml mature cheddar cheese — grated
1.00 eggs — beaten
5.00 ml mustard
1.00 ml salt
freshly ground black pepper
10.00 ml milk
5.00 ml butter

Method:

TOPPING: Mix cheese in a bowl with egg, mustard, salt and pepper. Add milk and butter and blend well.
Toast bread on one side only, cool for 2 minutes. Spread untoasted side with butter, top with a tomato slice and spread cheese mixture fairly thickly on top.
Place under a hot grill for 5 minutes, or until topping is puffy and golden brown.
Serve toasts immediately.
