Cheese and mustard toasts

  • 6
    slices wholewheat or French bread, cut into rounds with a biscuit cutter
  • butter for spreading
  • 6
    thin tomato slices, seasoned with salt and milled pepper.
  • TOPPING
  • 125
    ml
    coarsely grated mature Cheddar cheese
  • 1
    egg, beaten
  • 5
    ml
    mustard
  • 1
    ml
    salt
  • pinch milled black pepper
  • 10
    ml
    milk
  • 5
    ml
    butter
 

Method

 
TOPPING: Mix cheese in a bowl with egg, mustard, salt and pepper. Add milk and butter and blend well. Toast bread on one side only, cool for 2 minutes. Spread untoasted side with butter, top with a tomato slice and spread cheese mixture fairly thickly on top. Place under a hot grill for 5 minutes, or until topping is puffy and golden brown. Serve toasts immediately.
