CAKE
145.00 g castor sugar
2.00 eggs — extra-large
100.00 ml milk
20.00 ml margarine
140.00 g flour — self-raising
salt — pinch
TOPPING
50.00 ml margarine
50.00 ml marmite
80.00 g cheddar cheese — grated

Method:

Beat the castor sugar and eggs together until pale and creamy. Heat the milk and margarine for 2 minutes on 100 percent power. Sift the self-raising flour and salt together and add to the egg mixture alternately with the milk. Mix well. Spray a 1,5 litre ring mould with nonstick spray and line the base with kitchen towelling. Spoon the batter into the mould and place in the microwave on an upturned saucer. Microwave for 8-9 minutes on 70 percent power. Cool in the mould for a few minutes before turning out on to a wire rack. Remove the paper towelling. Heat the margarine and Marmite for 1 minute on 100 percent power. Spoon over the hot cake and sprinkle with Cheddar cheese.
