Cheese and chutney drumsticks

These are a great tasty recipe to jazz up the old drumstick.

Ingredients (8)

12.00 chicken — drumsticks
FILLING
100.00 g cheese — grated
65.00 ml chutney
5.00 ml fresh basil
SAUCE
80.00 ml soy sauce — light
15.00 ml Worcestershire sauce
65.00 ml tomato sauce
20.00 ml brown sugar — soft

Method:

Preheat the oven to 180 ºC (350 ºF).
Loosen the skin on top of each chicken drumstick carefully so it forms a bag.
Mix the cheese, chutney and basil. Insert the mixture under the skin and spread evenly.
Secure the skin with a cocktail stick.
Place a wire rack in an ovenproof dish and place the chicken drumsticks on top.

Mix all the ingredients for the sauce and brush the drumsticks with the mixture.
Bake for about 45 minutes or until the chicken is done (cover with aluminium foil if the drumsticks become too dry).
Brush with the sauce occasionally. Serve hot.
Serves 6.
