Cheese and barley bake

Ingredients

  • 30
    ml
    olive oil
  • 1
    onion
  • 2
    cloves garlic, crushed
  • 300
    g
    mixed vegetables
  • 100
    g
    barley, cooked
  • 30
    ml
    freshly chopped mixed herbs
  • 200
    g
    mature Cheddar, grated
  • 250
    ml
    sour cream or readymade cheese sauce
 

Method

20 minutes
 
Heat the oil in a large frying pan and sauté the onion and garlic.
Add the vegetables and stir-fry for five minutes.
Mix in the cooked barley, fresh herbs and half the cheese.
Place the mixture into a greased baking dish and top with the sour cream or cheese sauce.
Sprinkle over the remaining cheese and bake at 200 °C for 15 minutes or until golden.

VARIATION
Add a tin of tuna to the vegetable mixture for a delicious, cheese, tuna and barley bake.
