Cheese and bacon soup

    onions chopped
  • 250
    g
    carrots, peeled and chopped
  • 250
    sweet potatoes, peeled and cubed
  • 200
    butternut, peeled and cubed
  • 2
    ground cumin
  • 5
    ground coriander
  • 2
    Litres
    chicken stock
  • 125
    cream
  • 150
    mature Cheddar, grated
  • 15
    lemon juice
  • salt and freshly ground black pepper, to taste
  • 250
    g
    streaky bacon, chopped and fried until crisp
  • 30
    ml
    freshly chopped coriander
 

Method

Place all the vegetables in a large saucepan. Add the cumin, coriander and stock and bring to the boil. Reduce the heat and simmer for 25 minutes, or until vegetables are tender. Purée in a food processor or liquidiser until smooth. Return to the saucepan and stir in the cream. Heat gently, but don't boil. Add the grated cheese and stir until melted. Add the lemon juice and season to taste. Serve garnished with chopped coriander and crisp bacon pieces. Serves: 4-6 Preparation time: 20 minutes Cooking time: 30 minutes
