Ingredients (13)

2.00 onions — chopped
250.00 g carrots — peeled and chopped
250.00 sweet potatoes — peeled and cubed
200.00 butternut — peeled and cubed
2.00 cumin — ground
5.00 coriander — ground
2.00 Litres stock — chicken
125.00 cream
150.00 mature cheddar cheese — grated
15.00 lemon juice
salt and freshly ground black pepper — to taste
250.00 g streaky bacon — chopped and fried until crisp
30.00 ml fresh coriander — chopped

Method:

Place all the vegetables in a large saucepan. Add the cumin, coriander and stock and bring to the boil. Reduce the heat and simmer for 25 minutes, or until vegetables are tender. Purée in a food processor or liquidiser until smooth. Return to the saucepan and stir in the cream. Heat gently, but don’t boil. Add the grated cheese and stir until melted. Add the lemon juice and season to taste. Serve garnished with chopped coriander and crisp bacon pieces.
