1. Cut out the tops of the tomatoes to make a shallow hollow and place the tomatoes in a greased ovenproof dish.
2. Combine the sunflower seeds, garlic, herbs and olive oil. Add salt and freshly ground black pepper, to taste.
3. Place a slice of cheese on each tomato, topped with some of the herb mixture.
Bake in a preheated oven for 30 minutes until the tomatoes are cooked through,
but still holding their shape. Serve with fresh ciabatta bread as a starter or an
