Ingredients (8)

30 ml fresh chillies — 573
1 onion — sliced
2 cloves garlic — cloves, crushed
300 g mixed vegetables
100 g barley — cooked
30 ml fresh mixed herbs — chopped
200 g mature cheddar cheese — grated
250 ml sour cream — or ready-made cheese sauce

Method:

Preheat oven to 200°C.

Heat the olive oil in a large frying pan and sauté the onion and garlic. Add the mixed vegetables and stir-fry for five minutes. Mix in the cooked barley, fresh mixed herbs and half of the cheese.

Place the mixture into a greased baking dish and top with the sour cream or cheese sauce. Sprinkle over the remaining cheese and bake for 15 minutes or until golden.
