Ingredients (12)

190.00 ml self-raising flour — sifted
5.00 ml cinnamon — ground
1.00 ml cloves — ground
170.00 ml margarine — softened
85.00 ml brown sugar — soft
1.00 eggs
5.00 ml vanilla — essence
375.00 ml oats
250.00 ml carrots — grated
250.00 ml cheddar cheese
250.00 ml pecan nuts — chopped
125.00 ml raisins — seedless

Method:

1. Preheat oven to 180 ºC. Sift flour, cinnamon and cloves into a small mixing bowl.
2. In a large bowl, cream margarine, sugar, eggs and vanilla until light and fluffy. Stir in the flour mixture, mixing thoroughly. Add the oats, carrots, cheese, nuts and raisins; mix in well.
3. Drop tablespoonfuls onto ungreased baking sheets; flatten slightly. Bake for 12 minutes or until cookies are golden brown.
