    margarine, softened

    soft brown sugar

    vanilla essence

    ml
    oats
  • 250
    ml
    grated carrots
  • 250
    ml
    Cheddar cheese
  • 250
    ml
    chopped pecan nuts
  • 125
    ml
    seedless raisins
 

Method

 
1. Preheat oven to 180 ºC. Sift flour, cinnamon and cloves into a small mixing bowl. 2. In a large bowl, cream margarine, sugar, eggs and vanilla until light and fluffy. Stir in the flour mixture, mixing thoroughly. Add the oats, carrots, cheese, nuts and raisins; mix in well. 3. Drop tablespoonfuls onto ungreased baking sheets; flatten slightly. Bake for 12 minutes or until cookies are golden brown.
