Ingredients (10)

250.00 ml maize meal
250.00 ml flour — cake
15.00 ml Baking powder
5.00 ml salt
3.00 ml Bicarbonate of soda
1.00 ml cayenne pepper
250.00 ml Buttermilk
90.00 ml butter — melted
1.00 eggs — extra-large
250.00 ml cheddar cheese — grated

Method:

Preheat the oven to 220 ºC and grease a muffin tray or spray with non-stick spray. Line the muffin tin with paper cups. Mix the first 6 ingredients in a mixing bowl. Beat the buttermilk, butter and egg together. Add to the dry ingredients, stirring until just blended. Fold in the grated cheese. Spoon the batter into the muffin tin hollows, filling them three-quarters full. Bake for about 20 minutes until golden brown and done or a testing skewer comes out clean when inserted into the centre of the muffins. Let the muffins cool in the tin for 10 minutes. Serve lukewarm or at room temperature.
Makes 12 muffins.
