Cheat's vegetable lasagne

    lasagne sheets
  • olive oil for frying
  • 2
    large onions, chopped
  • 820
    cans tomatoes, chopped
  • 6
    baby marrows, sliced
  • 45
    white wine
  • 5

    mustard powder
  • 5
    chicken stock powder
  • salt and milled black pepper
  • 150
    feta cheese, crumbled
  • chopped fresh basil
  • extra feta and Parmesan cheese for sprinkling


Cook pasta according to packet instructions, drain and set aside. Heat oil and sauté onions until glossy. Add next 6 ingredients. Simmer until thickened. Season. Remove from heat and stir in feta cheese and basil. Place 4 lasagne sheets on a oiled baking sheet. Spoon mixture onto each sheet and top with another lasagne sheet. Repeat. Sprinkle with feta and Parmesan cheese and grill until golden and heated through. TOTAL KILOJOULE COUNT: 9 350 kJ (2 235 Cal). A portion: 2 340 kJ (560 Cal).
