Cheat's pasta puttanesca

Ingredients

    ml
    olive oil
  • 3
    cloves garlic, thinly sliced
  • 1
    onion, finely chopped
  • 10
    ml
    dried chilli flakes
  • 6
    anchovies, chopped
  • 2
    x 410 g cans chopped tomatoes
  • 5
    ml
    sugar
  • 16
    calamata olives, depipped
  • 2
    x 410 g cans tuna chunks in brine, drained
  • 1
    lemon, the peel, finely sliced
  • 80
    ml
    Italian parsley, roughly chopped
  • milled pepper
  • 500
    g
    pasta, cooked till al dente
 

Method

20 minutes
 
Heat oil in a pan.
Add onion, garlic and chilli and sauté for two minutes.
Add anchovies and cook to melt, about three minutes.
Add tomatoes and sugar, season well.
Cover and simmer for 15 minutes.
Stir in olives, tuna, lemon peel and parsley and adjust seasoning.
Toss into hot pasta and serve with a green salad.
Note: If this all sounds a bit fishy, omit the anchovies and add capers, basil, feta or cubed avocado at the last minute.
