Cheat's baked mushroom risotto

    each butter and olive oil
  • 1
    onion, chopped
  • 250

    mushroom, sliced
  • 350
    g
    arborio rice
  • 800
    ml
    hot vegetable stock
  • 80
    ml
    dry white wine (or use stock)
  • 50
    ml
    Parmesan cheese, grated, plus extra for serving
  • basil, to serve

Preheat oven to 180°C.

Heat the butter and oil in a large frying pan. Add the onion and fry for two minutes. Add the mushrooms and fry for five minutes or until the mushrooms are cooked.

Add rice and stir for two minutes until it is coated in oil.

Pour into a large ovenproof dish. Pour in the hot stock and wine (if using) and season with salt and pepper. Cover the dish tightly with foil. Bake in the preheated oven for 20 to 25 minutes, or until the rice is cooked and all the liquid has been absorbed. Stir in the Parmesan and serve with extra Parmesan on the side and fresh basil.
