Charred tomato and mozzarella salad

    ripe tomatoes
  • 50
    ml
    olive or sunflower oil
  • 2
    ml
    sugar
  • 250
    g
    mozzarella balls, cut into wedges
  • 20
    ml
    basil leaves
  • 50
    ml
    balsamic vinegar
  • coarsely milled black pepper
 

Method

 
Slice off tops of tomatoes and cut bases into wedges. Place tomato tops and wedges in a baking pan, drizzle over half the olive oil and sprinkle sugar over. Place under a hot grill for about 5 minutes. Arrange cheese and tomatoes on a large platter or on 4 small individual plates. Garnish with basil leaves, remaining olive oil and balsamic vinegar. Sprinkle coarse black pepper over. Serve as a starter with toasted ciabatta bread.
