Ingredients (7)

4.00 tomatoes — ripe
50.00 ml olive oil — or sunflower oil
2.00 ml sugar
250.00 g mozzarella cheese — balls, in wedges
20.00 ml fresh basil
50.00 ml vinegar — balsamic
freshly ground black pepper

Method:

Slice off tops of tomatoes and cut bases into wedges. Place tomato tops and wedges in a baking pan, drizzle over half the olive oil and sprinkle sugar over.
Place under a hot grill for about 5 minutes.
Arrange cheese and tomatoes on a large platter or on 4 small individual plates. Garnish with basil leaves, remaining olive oil and balsamic vinegar. Sprinkle coarse black pepper over.
Serve as a starter with toasted ciabatta bread.
