Ingredients (13)

30.00 ml fresh chillies — 573
1.00 red onion — peeled, wedges
2.00 garlic — cloves, crushed
50.00 g ham — cubed
2.00 courgettes — sliced
1.00 red pepper — chunks
1.00 pepper — green, yellow and orange, chopped
salt and freshly ground black pepper
400.00 g puff pastry — frozen, thawed
50.00 g cheddar cheese — grated
75.00 g feta cheese — cubed
1.00 tomatoes — wedges
1.00 eggs — beaten

Method:

Preheat oven to 200-220 ºC.
Heat olive oil in a frying pan and fry onion, garlic, ham, baby marrows and peppers in batches until golden. Transfer to a plate and season.
Roll out pastry to make a 30 cm square and place on a greased baking sheet. Sprinkle with Cheddar cheese.
Arrange feta, tomato, fried vegetables and ham in centre and turn up edges of pastry, as shown. Brush pastry with beaten egg.
Bake for 30 minutes, or until pastry is golden and risen.
