Char-grilled and fried vegetables

  • selection of vegetables
  • olive oil and butter
  • coarse salt and pepper


Cut a selection of vegetables such as courgettes, brinjals, carrots, patty pans and cauliflower into long strips or slices. Heat a griddle pan and pan-roast the strips of vegetables until charred. Heat a little olive oil and a knob of butter in a heavy-based pan and sauté the vegetables until just done. Season with coarse salt and freshly ground black pepper.
