Chana magajs (almond sweet)

    g
    chickpea flour (chana flour)
  • 25
    ml
    milk
  • 200
    g
    clarified butter (ghee)
  • 100
    g
    castor sugar
  • 160
    g
    ground almonds
  • 3
    ml
    cardamom seeds (elanchi)
  • 1
    ml
    nutmeg
  • 50
    ml
    milk powder
  • DECORATION
  • flaked almonds
  • red and green food colouring
 

Method

 
1. Place the chickpea flour, milk and 25 g (25 ml) of the clarified butter in a bowl and stir until the mixture resembles fine breadcrumbs. 2. Sift and set aside. 3. Heat remaining clarified butter in a saucepan and stir in crumb mixture. Braise until light brown. 4. Add the sugar, almonds, cardamom seeds, nutmeg and milk powder. Mix well. 5. Spread the mixture into a greased tray 18 x 18 cm. Colour the flaked almonds with the food colouring and sprinkle over the top of the mixture. Leave to set in the fridge for 3 to 4 days. Cut into squares or diamond shapes when ready to serve.
