Ingredients (11)

280.00 g chickpea flour
25.00 ml milk
200.00 g butter — clarified
100.00 g castor sugar
160.00 g almonds — ground
3.00 ml cardamom — elachi
1.00 ml nutmeg — ground
50.00 ml milk — powder
decoration — GROUPING

Food colouring — red and green

Method:

1. Place the chickpea flour, milk and 25 g (25 ml) of the clarified butter in a bowl and stir until the mixture resembles fine breadcrumbs.
2. Sift and set aside.
3. Heat remaining clarified butter in a saucepan and stir in crumb mixture. Braise until light brown.
4. Add the sugar, almonds, cardamom seeds, nutmeg and milk powder. Mix well.
5. Spread the mixture into a greased tray 18 x 18 cm. Colour the flaked almonds with the food colouring and sprinkle over the top of the mixture. Leave to set in the fridge for 3 to 4 days. Cut into squares or diamond shapes when ready to serve.
