Ingredients (5)

680.00 g granadillas
250.00 ml sugar
125.00 ml water — boiled
45.00 ml lemon juice — fresh
1500.00 ml wine

Method:

Halve granadillas and scoop flesh and pips into a bowl. Sprinkle with sugar and leave to stand for about an hour. Add boiling water and lemon juice and stir until sugar is completely dissolved. Strain through a sieve into a second bowl. Freeze for at least four hours until frozen. Keep the pips and freeze in another bowl. Cover and keep in freezer until needed. To serve, spoon two heaped tablespoons granadilla ice into each glass, add half a tablespoon of the frozen pips and top with champagne or sparkling wine.
