Ingredients

  • 1/2
    cup
    hot water
  • 2
    Tbs
    sugar/honey/xylitol
  • 2
    star anise
  • 1
    cinnamon quill
  • 1
    large grapefruit - zest and juice
  • 1
    bottle of bubbly - chilled
 

Method

Add all ingredients except the bubbly to a small pot, bring to a simmer and then allow to reduce by half or until slightly syrupy (will take 10-15 minutes).


Remove from the heat, allow to cool, strain and divide between 4 champagne glasses, top with your chilled champagne and serve immediately.
