Cauliflower salad

    orange juice

    bacon, cut into smaller pieces

    butter or olive oil

    cauliflower, broken into florets
  • 500

    green beans, coarsely chopped
  • 6
    chives, chopped

    sour cream
  • 15
    ml
    mayonnaise
  • 1
    green apple, skinned, cored and grated
  • 20
    ml
    walnuts, chopped
  • salt and freshly ground black pepper to taste

    poppy seeds
 

Method

 
Place the sultanas and currants in a dish and pour over the orange juice. Soak for 20 minutes. Fry the bacon in heated butter or oil until slightly crisp. Drain on paper towelling and set aside. Boil the cauliflower and beans for 3 minutes only in a little rapidly boiling salted water. Drain and plunge into ice-cold water. Mix the bacon, cauliflower, beans and chives and set aside. Mix the sultanas and orange juice mixture with the sour cream, mayonnaise and apple. Add the walnuts and season with salt and pepper. Mix everything together and sprinkle with poppy seeds. Serves 6.
