Carrot, courgette and broccoli stir-fry

    olive oil
  • 2
    carrots, cut into julienne strips
  • 2
    courgettes, cut into julienne strips
  • 225

    small broccoli florets, halved
  • 2
    cloves garlic, chopped
  • 2
    cm
    piece of fresh root ginger, peeled and finely chopped or grated
  • 115

    bean sprouts
  • 15
    ml
    fresh lemon juice
  • 15
    ml
    light soy sauce
 

Method

5-7 min
 
Heat oil in a nonstick wok or large frying pan. Add carrots, courgettes, broccoli, garlic and ginger, and stir-fry over high heat for 4-5 minutes. Add bean sprouts, lemon juice and soy sauce, and stir-fry for a further 1-2 minutes, until vegetables are just cooked. Season to taste and serve with grilled tomatoes and peppers. Serves 4.
