Carrot, coriander and orange soup

Ingredients

    onion, chopped
  • 300
    g
    carrots, chopped
  • 150
    g
    potatoes, diced
  • 15
    ml
    olive oil
  • 1
    orange, peeled, pith removed and chopped
  • 1.25
    Litres
    vegetable stock
  • 60
    ml
    fresh coriander, chopped
  • salt and freshly ground black pepper
  • 50
    ml
    cream
 

Method

20 mins
 
Sauté the onion, carrots and potato in the oil for three to four minutes or until tender but not browned.
Add the orange and vegetable stock and bring to the boil.
Simmer the vegetables until tender and done and add the coriander and seasoning.
Process until smooth and stir in the cream.
Adjust seasoning and serve.
Makes 1.2 litres.
