    ground cinnamon

    mixed spice

    medium carrots, peeled and grated

    chopped dried apricots

    butter, melted

    treacle sugar

    self-raising flour

    Amaretto or other nut liqueur (or orange juice)

    cream cheese

    soft butter

    icing sugar

    flaked almonds, lightly toasted
 

Method

Preheat oven to 180 ºC. Mix all the loaf ingredients together in a large bowl. Pour into a greased and lined loaf tin and bake in the oven for 70 minutes, or until a skewer inserted in the centre comes out clean. Cool completely before icing. ICING Beat cream cheese and butter together well. Add icing sugar, a little at a time, until combined. Spread over loaf and sprinkle with almonds. Makes 1 loaf (22,5 x 11,5 cm).
