Ingredients (15)

2.00 eggs — large, slighly beaten
2.00 ml Bicarbonate of soda
2.00 ml cinnamon — ground
2.00 ml mixed spice — ground
2.00 carrot — peeled, grated
100.00 ml apricots — dried, chopped
180.00 g butter — melted
190.00 g treacle sugar
275.00 g flour — self-raising
100.00 ml sultanas
50.00 ml amaretti biscuits
ICING
60.00 g cream cheese
30.00 g butter — soft
140.00 g icing sugar
100.00 ml almonds — flaked, toasted

Method:

Preheat oven to 180 ºC. Mix all the loaf ingredients together in a large bowl. Pour into a greased and lined loaf tin and bake in the oven for 70 minutes, or until a skewer inserted in the centre comes out clean. Cool completely before icing.
ICING
Beat cream cheese and butter together well. Add icing sugar, a little at a time, until combined. Spread over loaf and sprinkle with almonds. Makes 1 loaf (22,5 x 11,5 cm).
