    kg
    pork ribs
  • lemon wedges
  • CARIBBEAN WEDGES
  • 1
    onion, finely chopped
  • juice and rind of 1 lemon
  • 90
    ml
    olive oil
  • 1
    chilli, seeded and chopped
  • 10
    ml
    allspice
  • 5
    garlic cloves, crushed
  • 2
    ml
    dried thyme
  • 2
    ml
    dried chilli flakes
  • 2
    ml
    nutmeg
  • 5
    ml
    grated fresh ginger
  • salt and black pepper
  • 60
    ml
    rum
  • 45
    ml
    soft brown sugar
  • 12
    bay leaves
 

Method

 
Place the ribs in a shallow dish.
Mix all the ingredients for the marinade and pour over the ribs.
Leave to marinate overnight.
Drain and braai the ribs, preferably covered for about 35 to 45 minutes or until cooked through and crisp on the outside.
Brush frequently with extra marinade.
Serve with lemon wedges.
