Caribbean fish dish

    butter

    medium-sized onions, coarsely chopped
  • 1
    green pepper, seeded and sliced
  • 500

    frozen hake prime cuts
  • 440
    g
    pineapple chunks in syrup
  • 70
    g
    tomato paste
  • salt and freshly ground black pepper to taste
 

Method

 
Melt the butter in a medium sized saucepan and sauté the onions until tender. Add the green pepper, fish, pineapple chunks and syrup, and tomato paste, cover and simmer for about 15 minutes until done. Season to taste with salt and pepper and serve with rice. Serves 4-5.
