Caramelised fruit with amarula liqueur

    ml
    butter
  • 125
    ml
    brown sugar
  • 200
    g
    marshmallows
  • 250
    ml
    amarula liqueur
  • 50
    ml
    orange or lemon juice
  • few strawberries, halved
  • 4
    bananas, roughly sliced
  • 3
    oranges, cut into segments
  • 2
    lemons, rind cut into long thin strips
 

Method

 
Melt the butter and sugar over medium heat until caramelised. Stir only occasionally. Add the marshmallows and heat while stirring until melted. Stir in the liqueur and orange or lemon juice and bring to the boil. Add the fruit and heat until warm. Do not allow the fruit to become soft. Serve hot with ice cream.
