Caramelised crispy chicken with herbs

    kg
    chicken wings
  • 60
    ml
    sunflower oil
  • 30
    ml
    butter
  • 3
    onions
  • 90
    ml
    sugar
  • 90
    ml
    fish sauce
  • 5
    ml
    freshly ground black pepper
  • mint or basil leaves
 

Method

30 minutes
 
Fry batches of wings over moderate heat in the oil and butter, until lightly browned. Remove and set aside.
Soften the onions in the remaining oil in the pan. Add the sugar and gently cook until the mixture turns a rich brown. Add the fish sauce and stir. Reduce the heat and add the chicken and pepper, cover and cook for about 20 minutes, turning occasionally, until the liquid is syrupy and the chicken caramelised and chewy.
Serve in bowls with mint.
