Caramelised pears with blue cheese

  • 150
    granulated sugar
  • 4-6
    pears, sliced into rings
  • 200
    blue cheese, cut into wedges
  • fresh herbs, to garnish


Place the sugar in a small pan, add ¼ cup water and stir to dissolve sugar over a low heat. Increase the heat, bring to a boil and simmer for 8 to 10 minutes or until the sugar turns golden.

To Serve:

Place the wedges of blue cheese on 4 plates and top with sliced pear rings. Pour over the sugar syrup and serve.
