Ingredients (11)

75.00 ml fresh chillies — 573
2.00 red onion — halved, thinly sliced
15.00 ml treacle sugar
45.00 ml fresh sage — chopped
500.00 ml flour — cake
15.00 ml Baking powder
5.00 ml mustard — powder
30.00 ml poppy seeds
250.00 ml cheddar cheese — grated
1.00 eggs — extra-large, lightly beaten
30.00 ml milk

Method:

1. Heat 30ml of the olive oil in a small saucepan and gently fry the onions over a low heat for 10 or 15 minutes. Stir in the sugar and the sage, and cook for a further two to three minutes. Remove from the heat and set aside to cool.

2. Sift the flour, baking powder and mustard powder into a large bowl and season with salt and black pepper. Stir in the poppy seeds, cheese and cooled onion mixture. Add the egg, the remaining olive oil and just enough milk to form a soft dough. Do not overmix.

3. Spoon the mixture into greased muffin tins and bake in a preheated oven for 20 to 25 minutes. Remove from the oven and turn out onto a cooling rack.
