Caramel tartlets

  • PASTRY
  • 200
    g
    cake flour
  • 25
    g
    cocoa
  • 5
    ml
    salt
  • 30
    ml
    sugar
  • 150
    g
    butter, chilled
  • 1
    egg yolk
  • 60
    ml
    cold water (approximately)
  • FILLING
  • 2
    oranges, peeled
  • 380
    g
    Nestlé Caramel Treat
  • 45
    ml
    sugar
  • egg for brushing
 

Method

 
PASTRY: Sift the flour, cocoa, salt and sugar into a large bowl. Cut in the butter, then rub in until mixture resembles coarse breadcrumbs. Mix the egg yolk and water and cut in to flour mixture to form a firm dough. Cover with plastic wrap and chill. FILLING: Remove the orange segments from the pith and set aside. Roll out the pastry and using a scone cutter, cut out bases to fit patty pans. Place bases in the greased patty pan tins. Half fill each base with caramel condensed milk. Bake in a preheated 160 ºC oven for about 20 minutes. Allow to cool. Arrange orange segments of top of caramel.
