Caramel rice pudding

    milk

    ml
    raw rice
  • 125
    ml
    seedless raisins
  • 60
    ml
    coconut
  • 15
    ml
    margarine
  • 90
    g
    (1 packet) instant caramel pudding
  • 500
    ml
    cold milk
  • 5
    ml
    ground cinnamon
  • 3
    ml
    nutmeg
  • 5
    ml
    caramel essence
 

Method

 
Bring 750 ml milk to the boil and stir in the rice, raisins and coconut.
Cover and simmer, stirring occasionally, until all the milk has been absorbed.
Stir in the margarine.
Mix the instant pudding powder with 500 ml cold milk, add the cinnamon, nutmeg and caramel essence and whick until the mixture begins to thicken.
Stir into the cooked rice mixture.
Serve immediately or chilled.
