Caramel pudding

    sugar

    water
  • 250
    ml
    cake flour
  • 7
    ml
    bicarbonate of soda
  • 125
    ml
    buttermilk
  • 30
    ml
    butter, melted
  • 30
    ml
    golden syrup
  • custard or cream to serve
 

Method

20 minutes
 

Heat the sugar and water in an 18 cm heavy-based saucepan until the sugar has melted and bring to boil.
Meanwhile sift the cake flour and bicarbonate of soda together.
Mix the buttermilk with the melted butter and golden syrup and add to the flour mixture.
Mix to form a stiff batter.
Spoon the batter into the boiling sauce, pressing it down with the back of a spoon so it can spread slightly (the mixture will foam and break apart).
Simmer slowly, uncovered, for 20 minutes.
Remove from heat, cover and leave to stand for 10 minutes.
Serve with custard or cream.
