Caramel pecan buns

    ground cinnamon

    coarsely chopped pecans, for topping

Pre-heat oven to 200ºC. Grease a baking sheet. 1. Sift together flour and salt, then add sugar and yeast, mixing lightly. 2. Add milk, water and oil to dry ingredients, then mix to form a soft dough. 3. Turn onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. 4. Place in a greased or oiled bowl,cover and leave to rise in a warm place for 15-20 minutes until doubled in size. 5. Knock down dough. Turn onto a lightly floured surface and roll out into a rectangular shape of about 35cm x 27cm. 6. For filling: Melt half the butter and brush over surface of dough.Combine sugar and cinnamon and sprinkle over the brushed butter. Roll up like a Swiss roll, starting from the long side, then cut into 12-15 slices. 7. Melt remaining butter and brush over the slices. Sprinkle nuts over. Place rolls, cut side down, on baking tray. Cover and leave to rise for about 15 minutes. Bake in oven for 15-20 minutes, or until light brown.
