Caprese salad (Tomato, mushroom and mozzarella)

Ingredients

    ml
    olive oil
  • 30
    ml
    balsamic vinegar
  • 2
    cloves garlic, crushed
  • 250
    g
    fresh black mushrooms, sliced
  • 3
    tomatoes, sliced
  • 200
    g
    mozzarella cheese, sliced
  • 30
    g
    fresh basil leaves
 

Method

 
Mix half the oil and vinegar together with the garlic. Pour over the sliced mushrooms and marinate for half an hour. Arrange the tomato and mozzarella slices on top of a bed of fresh basil leaves. Top with mushrooms and drizzle with remaining oil and vinegar. Season to taste. Serve as a starter or light lunch with crusty Italian bread.
