    flour

    baking powder
  • 310
    ml
    sugar
  • 375

    butter or margarine
  • FILLING
  • 4
    bananas, sliced
  • 1
    x 410 g can pie apples
  • 0.50
    pineapple, peeled and thinly sliced
  • 1
    x 410 g can peach halves
  • 80
    ml
    chopped pecan nuts
  • 65
    ml
    fruit cake mix
  • 0.50
    lemon, the juice
  • cinnamon, nutmeg and sugar to taste
 

Method

 
Preheat oven to 200 °C.
Sift cake flour and baking powder together, then add sugar.
Grate butter and, using your fingertips, rub it into dry ingredients until well mixed.
Press two thirds of pastry into base and along the side of a large pie dish. Chill remaining pastry.
TO MAKE FILLING:
Divide each ingredient in half and arrange alternating layers of bananas, pie apples, pineapple and pech halves in dish.
Sprinkle with nuts and fruit cake mix.
Sprinkle lemon juice on top and flavour with cinnamon, nutmeg and sugar.
Repeat layers and grate rest of pastry on top.
Bake for about an hour, or until pie crust is done and golden brown.
