Candied sweet potatoes

  • 900
    g
    sweet potatoes
  • 150
    ml
    dark rum
  • 100
    g
    dark brown sugar
  • 15
    ml
    butter
  • 150
    ml
    water
  • 10
    ml
    Angostura Bitters
 

Method

45 minutes
 
Boil the whole sweet potatoes in their skins for about 20 minutes or until tender. Cool and peel, cut flesh into 1 cm slices and arrange in a roasting pan.
Mix all the other ingredients in a small saucepan and bring to the boil for 1 minute. Pour over the sliced sweet potatoes and bake in a preheated oven at 180 ºC for 20 minutes, stirring occasionally to ensure the potatoes are well covered.
