Camembert topped with cranberry relish

Ingredients

  • 30
    ml
    butter
  • 1
    onion, halved and thinly sliced
  • 125
    ml
    dried or frozen cranberries
  • 5
    ml
    fresh grated ginger
  • pinch of ground mixed spice
  • 50
    ml
    brown sugar
  • 15
    ml
    olive oil
  • 5
    ml
    white wine vinegar
  • 1-2
    rounds Camembert
 

Method

Heat the butter and sauté the onion slowly for 8-10 minutes.

Add the remaining ingredients, except the Camembert, together with about 50ml water.

Simmer the mixture for 10-15 minutes. Add more water if necessary. Remove from the heat and set aside to cool.

Allow the cheese to reach room temperature and place on a platter. Spoon the cranberry relish on top of the cheese. Serve with bread.
