  • 250
    ml
    flour
  • 185
    ml
    milk boiled with
  • 60
    ml
    butter
  • 15
    ml
    baking powder
  • 125
    ml
    bran
  • 2
    eggs, well beaten
  • 5
    ml
    vanilla essence
  • 125
    ml
    calendula petals
 

Method

 
1. Whisk the flour into the butter and milk mixture, add eggs, bran and vanilla and baking powder. Finally add calendula petals. 2. Mix well. Pour into well-greased muffin pans or into a cake tin, greased and lined with paper. 3. Bake at 180 ºC for 10 minutes. You can make this into a large cake too - an easy-to-make treat for afternoon tea! (The large cake will take 15-20 minutes to bake). 4. Cool. Top with a butter icing to which fresh calendula petals have been added. Serve with fresh calendula flowers tucked amongst the little cakes.
