Calamari with burnt butter

    calamari tubes
  • 45
    ml
    butter
  • 15
    ml
    olive oil
  • 4
    cloves garlic, sliced
  • 7
    ml
    crushed chilli (optional)
  • 1
    small lemon, juice
  • salt and milled black pepper
 

Method

 
Wash calamari thoroughly, making sure that you remove the thin, plastic-looking spine in the centre. Pat dry. Heat butter and oil in a large pan or wok. Add garlic and chilli and sauté over high heat for about 1 minute. Add calamari and stir-fry for about 1 minute. Add lemon juice and seasoning and fry for a further minute. Serve immediately, with crusty bread to mop up juices. TOTAL KILOJOULE COUNT: 3 330 kJ (795 Cal). A portion: 835 kJ (200 Cal).
