350.00 g calamari — tubes
45.00 ml butter
15.00 ml fresh chillies — 573
4.00 garlic — cloves, sliced
7.00 ml fresh chillies — crushed
1.00 lemon — juice only
salt and freshly ground black pepper

Method:

Wash calamari thoroughly, making sure that you remove the thin, plastic-looking spine in the centre. Pat dry.
Heat butter and oil in a large pan or wok. Add garlic and chilli and sauté over high heat for about 1 minute. Add calamari and stir-fry for about 1 minute. Add lemon juice and seasoning and fry for a further minute.
Serve immediately, with crusty bread to mop up juices.
