Calamari sauce for pasta

    olive oil
  • 15
    ml
    butter
  • 1
    onion, chopped
  • 2
    crushed garlic cloves
  • 1 385g
    can
    tomatoes
  • 50
    g
    tomato paste
  • 5
    ml
    sugar
  • Salt and freshly ground black pepper
  • 125
    ml
    dry white wine
  • 15
    ml
    chopped fresh oreganum
  • 2
    green peppers, seeded and sliced into slivers
  • 50
    g
    calamari steaks, cubed
  • 500
    g
    pasta of your choice
 

Method

45 mins
 
Heat the oil and butter in a pot over medium heat.
Fry the onion and garlic until soft.
Add the tin of tomatoes, tomato paste, sugar, salt, pepper and white wine and simmer for 30 minutes. Remove from the heat, add the oreganum and cool slightly.
Process the sauce in a food processor until smooth.
Return the sauce to the pot, add the peppers and simmer for 5 minutes.
Add the cubed calamari and simmer for another 5 minutes.
Serve with 500g pasta, cooked according to packet instructions.
