Calamari and coriander mayonnaise open sandwiches

  • sunflower oil for frying
  • 300
    g
    frozen crumbed calamari
  • 4
    thick slices crusty bread, toasted
  • 1
    red onion, peeled and sliced into rings
  • lettuce to garnish
  • CORIANDER MAYONNAISE
  • 45
    ml
    chopped coriander
  • 1
    chilli, minced
  • 60
    ml
    good-quality mayonnaise
 

Method

 
Combine coriander, chilli and mayonnaise well.
Heat oil in a deep frying pan until hot.
Deep fry calamari rings, a few at a time, for no more than 2 minutes (otherwise calamari will be tough).
Do not overcrowd pan.
Drain on paper towels.
Spread mayonnaise on warm toasted bread, top with onion rings, calamari rings and lettuce and serve.
